THe WINEMAKING

The Watkins Cellar Reserve Series takes this special 2018 Langhorne Creek Cabernet Sauvignon and gives it extended maturation in the winery and completing oak to produce an exceptional wine that it is at its best to drink now. 

The intense ruby colour is maturing to a rich garnet. The beautiful Cabernet Sauvignon flavours have begun developing from mint through to berry and forest floor characters, underlaid by a touch of rich cigar box notes. 

The mid palate has remained firm through maturation to produce a rich, generous wine that lingers for a long finish. The powerful Cabernet Sauvignon tannins have been tamed into approachability, presenting a well-structured wine.  

The Vineyard

The maritime influence at our Langhorne Creek vineyard that is created by the afternoon sea breezes allows fruit flavours to evolve without excessive sugar production. The limestone based soils create wines of power and elegance with great varietal character. This vineyard is ideal for precision control over water use on the vines and known to provide more structural wines.

Primary flavors

Blackberry

Blackberry is a primary fruit aroma found in red wine and often tastes earthy and rustic, sometimes with a sweet edge.

Forest floor

Forest floor in wine is traditionally a tertiary aroma that comes from ageing a bottle in some red wines. It's associated with similar notes of mushroom and leather which can develop over time. You might also find a wine that is described as 'earthy' will have a smell of wet forest floor.

Secondary flavors

Toast

Depending on how much toasting the barrel has had, the flavours will differ. If the barrels have had light toasting, the toasty characteristics will be more subtle. As the toasting becomes heavier, the characteristics become stronger flavours:
Light Toasting – Cinnamon, cloves, vanilla, coconut or caramel
Medium Toasting – Coffee, cocoa, toast, caramel, vanilla or honey
Heavy Toasting – Vanilla, smoke, crème brûlée, butterscotch, toffee

Leather

A leather wine tasting note is often paired with notes of vanilla, toast and cedar. It's a savoury note that you'll often find in a wine that has muted primary fruit characteristics that come from the grapes themselves. There are some that believe that leather is more of a texture from tannins than an aroma.

Cedar

Cedar-smell is likened to pencil shavings and is often associated with many red wines matured in oak barrels.
